Chicken adoboOr, in Tagalog, "chicken adobo." is a classic (indigenous) Filipino dish.

  1. Marinade chicken, half the garlic, soy sauce, vinegar, and bay leaves for at least 20 minutes, or at most overnight.

  2. Heat oil 1 tbsp in a skillet on high heat. Remove chicken and set the marinade aside. Sear chicken in the pan until both sides are brown.About a minute on each side. Do not cook the chicken all the way!

  3. Remove chicken from skillet and set aside.

  4. Heat remaining oil in skillet. Add remaining garlic and onion and cook for 1–2 minutes.

  5. Add the marinade, water, sugar, and black pepper. Bring to a simmer then turn heat down to medium high. Simmer for 5 minutes.

  6. Add chicken smooth side down. Simmer uncovered for 20–25 minutes. Flip chicken at around 15 minutes, until the sauce reduces to a thick jam-like syrup.

  7. If the sauce isn't thick enough, remove chicken onto a plate and let the sauce simmer by iteself, then return chicken to the skillet to coat in the glaze.

  8. Serve over rice with tomato slices in fish sauce, tapsilog, soy sauce, vinegar, etc.
