부대찌개, (IPA: [pudɛ.t͜ɕ*iɡɛ]; romanised: budae-jjigae) army stew, or army base stew[cite:@sue2016budae] is a Korean–American hotpot dish consisting of a spicy stew with noodles and various meats thrown in. It's simple, cheap, versatile, and delicious! This particular recipe was shared with me by my dear Faye.[cite:@chun2025army]

Etymology

부대 (budae) military camp + 찌개 (jjigae) stew.[cite:@wiktionary2017budae@beck2022budae@sue2016budae@wiktionary2024jjigae]

찌개 (jjigae) refers to a stew of a thicker consistency than 국 (guk), which is closer to soup.

History

In the early 1950's, after the Korean war, food had become scarce in Korea. The processed foods present in army base stew (spam, sausage, cheese) came from US military bases. Even throughout the economic recovery of South Korea, budae-jjigae has grown to be a comfort food for many.[cite:@beck2022budae@sue2016budae]

Ingredients

You can really throw in all sorts of things. Other potential ingredients include 다진 쇠고기(ground beef), 라면 flavour packs, baked beans, lunch meats, 치즈(cheese), 버섯(mushrooms), etc.

For the sauce, you'll want

Instructions

  1. Mix sauce ingredients together and set aside.

  2. Julienne 양파, finely chop 파, diagonally chop 소시지, cut 두부, cut 스팸.

  3. Add prepped ingredients around the pot, then add 김치 and 떡 in the center.

  4. Place pot on stove, add sauce mixture on top and beef bone stock.

  5. Simmer for 5 minutes then add in 라면 and 우동 noodles until cooked. Add more water and broth as necessary!
